Norfolk Quail - smoked heart - teriyaki maitake - hazelnut. We cook the Quail on the crown and make a split sauce with the carcasses, fresh hearts are brined and then smoked and cooked to order, mushroom comes in four ways - raw, leaf, ketchup and powder - love this dish 🔥
