There's a rule in restaurants called the 30/10 Rule. For every dollar you make: 30% goes to Food Costs. 30% goes to Labor Cost 30% goes to Overhead (rent, insurance, repairs, etc.) 10% goes to Profit. You might think I'm making this up. I'm not.

Cheap food is actually *really* expensive. You can get processed food off the dollar menu or w/ a low price tag. But it causes: 💰diseases that burden our healthcare system 💰environmental damage we need to fix Taxpayers are paying for this cheap food, we just don’t know it

Even the BEST operators only do 20-25% margins: Think Chipotle inventing 'assembly line' fast casual. Or Shake Shack in its prime doing $7MM/store in NYC. These are exceptions, not the rule (a story for another 🧵). You can beat it, sure. But 30/10 is the industry standard.

Anyone have examples of unique work schedules they can share? Was reading about a Chick-fil-A that does $15mm+ in revenue. They say one of the keys to their success is a 3-day, 12-14 hr shift work week (opt-in, ~35 managers/team members). Nurses? Firefighters? What else!?

With the 30/10 rule: only $.10 of every $1 goes into your bank account. But every cent of that $1 you spend, that's all on you. So that $10/day you waste in food? You need to sell $100 worth of food to make that back. 🤯 Expenses are more expensive than you think.

@SievaKozinsky Definitely a great move! Competing for talent is tough, but once you get some solid people you can pay above industry average pay to retain them. Then use technology and good SEO strategies to outrank old school competitors. Hard work to start but then generational wealth!

@franchisewolf 3/ in the world we live in today (twitter, YouTube, courses, etc) ANYONE can learn all of these things. Most mistakes can be fixed. There’s risk, sure, but many people don’t try to go for it because they assume someone else has all the answers or is more capable. They’re not.

@girdley Recruiting, when done right, is definitely a (nearly) full time job. If you want to prioritize having great people, this needs to be a priority. I think this is a great advice that can eliminate a lot of headaches (like hiring poorly or being chronically understaffed)
