When Travis left Uber in 2017, UberEats was rapidly growing. The potential was obvious, and “Dark” or “Cloud” Kitchens were coming up. Anyone could rent kitchen space, often newly built in old garages or shipping containers, to prep food for UberEats, Doordash, Deliveroo etc.
