I wish I could say I had cooked this, but it was made by a friend. Absolutely delectable bisque of scallops (both bay & sea) and lobster. Touch of white wine. And the squash was tender & a perfect match.
This pork, served in a restaurant in the Galicia region of Spain, was cooked in olive oil and heavily seasoned with smoked paprika. The fried potatoes were mixed in and picked up the delicious seasonings.

straight off the boat in New Hampshire, 10 lobsters for 4 people doesn’t seem like too many. But there were 4 left over for lobster salad, lobster stock, and lobster oil.

rolled & tied, covered with a mix of sausage, minced prosciutto, chopped mushrooms & herbs, wrapped in tender dough, Marsala wine drizzled in top vent throughout baking. Great flavor.
In the region of Galicia, Spain, house wine like this Ribeiro is delivered to restaurants in wooden barrels, served at table in a pitcher, and drunk out of ceramic bowls. This is in the town of Santiago de Compostela.

Festive dinner for the quarantined family. Pork tenderloins rubbed with herbs & garlic then sous vide to 130F. Put in hollowed baguettes & topped w sautéed shiitake, closed & topped w pancetta. Roast til pork is 145 F.
This is why you should start collecting wine now. Inexpensive to buy today, a treasure - if you’re lucky & have stored it well - when you’re getting old! And this was fabulous.

Holed up at home, so I cooked with my friend Shona Patel via FaceTime. She taught me how to make her recipe for Sabudana Kichri. Tapioca pearls, cumin, curry leaves, ginger, hot pepper, coconut, peas, peanuts, cilantro, lemon. Amazing!
