Pulled pork. Delicious. 10 hrs. in the Pit Barrel. Took it off around 200° and rested for 2 hrs. wrapped in butcher paper. Falling apart tender. Great bark.
Set some ribeye steaks out. Kosher salt. Then up to room temperature. Frying in cast iron pan this evening. Too many thunderstorms nearby to grill.

Dry brined this choice sirloin all day. Cast iron pan with avocado oil. Cooked until 125° and rested for 8 minutes. This steak was really good. Good crust. Very tender. 🥩🥃
