I want to share a method that I have been testing. On Monday of last week I prepped 2 SD loaves with an overnight bulk rise. Tuesday morning, this loaf was wrapped in its Banneton/inside a loose plastic bag. I took this out this morning. Long ferment - 5 days. Look at this rise!

My Sourdough skills are improving! I am now doing multiple stretch and pulls before the bulk rise overnight. Then, in the morning I gently turn it into the flour dusted cloth lined Banneton basket. Slip it into the fridg for a few days to long ferment. Pretty little loaf!!! 🍞

With the extra trimmings of our pork share, I roasted / smoked the bones on the Traeger an hour. Into the pot with onion, celery, carrot, garlic, bay leaves, rosemary, thyme, salt and peppercorns. All day low and slow. Sat overnight, strained. Skimmed fat and processed! Stock! 👊

Dinner on the farm last night! Chef John’s Salisbury Steak with garlic mashed potato’s and home grown corn. Butter lettuce with fried onions, broccoli sprouts and a great Caesar dressing courtesy of Mary Berg! A hearty meal after a day of planting! Make your own food!!!
