I think a lot of people hear how "easy" podcasting is (low buy-in, tech, etc) and think that's all that's needed. Like you say, it soon becomes apparent it's much more when breaking things down.

The bigger question is do you have a food idea for your topic? Is it sustainable beyond a couple episodes.
My general feeling is why not. Just have an idea what you want to talk about and have a general idea for several episodes.

It's where bullets for subsequent episodes can really help. Design a narrative, and then see what you can add from stuff you've seen discussed (in-person or online) around the topic.
